Below are a few books that I've read that I can recommend. Jim Collings also has some used books for sale. jcollings@kc.rr.com.
Starting Out in Backgammon is the first book on the game that I read. I thought it was a great book for a beginner. It has a chapter on opening moves, and chapters for each of the various types of games: running game, holding game, back game, blitz, and priming game. And it's cheap!

Backgammon by Paul Magriel is THE classic backgammon book. This is a vey big hardcover book, very much like a college text book. This book has everything mentioned in the book above, plus many many more chapters of more advanced topics, like duplication, diversification, and safe play vs. bold play. The example games are great, with a picture for every move. There's so much in this book, you could read it many times and keep learning.

This book is a series of annotated championship games. It's good for testing yourself on what move you would make, then comparing your reasoning to the author's explanation of the correct move. He doesn't give a picture after every move, which can be confusing, but this is still a good book with lots of more advanced ideas in it.
